Having been obsessed with ‘What I eat in a day” youtube videos, I have decided to make a blog post about my own eating habits. My meals vary a lot at university and I definitely don’t eat like this every day but I try to stick to the same meals especially for breakfast and lunch but with a different dinner. So, let me take you through a day at the university of some ‘healthier’ (I try, ok…) meals I have been eating.
Breakfast – Yogurt and Granola
Ingredients:
- Greek Yogurt
- Nut-free granola (I used Tesco seeds granola)
- Banana
- Chia Seeds
- Honey
- Cocoa Nibs
Although I’m really not a fan of breakfast this is what I would have if I have an early lecture or needed to eat something in the morning. I don’t have breakfast most mornings but when I was revising, as I was on this day, it’s important to start the day right (and put off revising a little longer…). I made a yoghurt and granola bowl, which is granola on a bed of yoghurt topped with sliced banana, chia seeds, cocoa nibs and a drizzle of honey. If you can’t tell I like my breakfast to be VERY sweet so this is perfect. Chia seeds and cocoa nibs are a great alternative to nuts as they add in some texture and extra flavour too!
Lunch – Mushroom and avocado bagel
Ingredients:
- 4 Mushrooms
- Garlic
- Half an avocado
- Bagel
I have only recently discovered that I like mushrooms, so I feel like I need to eat them daily to make up for lost time. This is a really quick lunch and is great to make if you need to quickly stop home for a bite to eat or revising at home. In a pan, fry the mushrooms with olive oil and garlic, mash half an avocado then place it all on a bagel. DELISH.
Snacks – Graze bar and Green tea
It’s so hard to find healthy(ish) snacks without nuts, but I have recently found that graze do have some nut-free bars. They have quite a few flavours but the cocoa and orange or cocoa and vanilla are my favourites (#notsponsored). They are a great snack to have when I’m craving chocolate or need to eat and procrastinate. I also normally have a hot drink too and this usually keeps me full until dinner.
Dinner – Chicken, potatoes and broccoli
It looks like a pretty basic dinner and I want to call it a mini roast dinner?? No?? (Some Yorkshire pudding and gravy would make this dinner!). Anyway, as I mentioned before my dinner usually varies with what I bought that week or if I go out for dinner. For this meal, pan-fry the chicken and cut the potatoes into circular slices. Then boil the potatoes until soft, either roast in the oven or pan with oil, garlic and basil for ten minutes and boil the broccoli. Enjoy!
